All-Purpose Mock "Ground Beef"

1 cup water
1 tbsp. nutritional yeast
1 tbsp. soy sauce (use gluten free if needed)
1 tbsp. Worcestershire sauce
1 tbsp. tomato paste
1 tsp. dried Italian herbs
1 tsp. dried onion flakes
1 cup dehydrated soy tvp (textured vegetable protein)
Salt and pepper to taste

This is a great recipe for an all-purpose mock "ground beef" substitute.  TVP is a great alternative to ground beef.  Plain TVP is low in fat, easy to prepare and very versatile because it absorbs the flavors of the ingredients you add to it, making it easy to use in soups, stews, chili, tacos, casseroles, hot or cold sandwiches.  Really anywhere you would use a ground meat!  I use Bob's Redmill TVP.  It is inexpensive and I am able to get it from my local health food store, but if you can't find it you can order it from Bob's Redmill online or on Amazon.  One cup of dry TVP equals two cups of cooked meat once it has been reconstituted.   This makes the price per pound very affordable if you compare meat prices and soy TVP prices.

To make this recipe, first you need to add the one cup of water to a small saucepan over high heat.  While the water is coming to a boil add the nutritional yeast, soy sauce, Worcestershire sauce, tomato paste, Italian herbs, onion flakes, salt and pepper.

Whisk to combine until the tomato paste is dissolved and the mixture is smooth.  If the mixture is boiling before you get everything combined just remove it from the heat or it will boil over.
Stir in one cup of dry soy TVP.

Cover the saucepan with a lid, remove from heat and let it sit for about five minutes.  After five minutes the mock  "ground beef" is ready for any dish you want to use it in.  So simple and quick to make, it is very versatile and it freezes well.
