"You won't miss the meat or cheese" Pizza


Quick and easy pizza that is good for you!  Gluten-free, dairy-free and vegan.  You won't miss any of it, I promise!

Pre-heat the oven to 400 degrees. 
When cooking with gluten-free flours it is important to measure them by WEIGHT.  I use a small non-digital food scale that I picked up at a thrift store.   On your scale measure out 8 oz. of gluten-free flour.  Then to that add enough oat flour to make the scale come to 10 oz.



 Add the flours to your bowl and then add the yeast, salt and xanthan gum (optional) and mix well.  Add the water and the agave nectar and mix thoroughly to combine.  Dough will be very sticky.



Line a baking tray or pizza pan with parchment paper.  Spoon the dough onto the paper.  Wet your hands with water (this keeps the dough from sticking to your hands) and press the dough out into a round circle a little less than the thickness you desire.  I press mine out pretty thin as it will rise some.  Cover it with another sheet of parchment paper or a clean towel and let it rise for about thirty minutes.



Bake the dough in the oven about 15 minutes or until it is dry on top.  Top with your favorite pizza sauce and toppings.  If you are using dairy cheese you can add that now.  I don't dairy cheese so I just add sauce and vegetables.  For this pizza I used onions, mushrooms, colored bell peppers and fresh baby spinach.  



Place the pizza back into the oven and bake for about 30 minutes or until the pizza is browned on the bottom well.

As I mentioned I don't eat dairy cheese, but I do use my recipe for vegan cheese sauce.  Pizza is a perfect thing to use the sauce for.  No it won't taste like traditional "cheese" on your pizza, but for me it curbs that pizza craving with cheese.
